Waffles

Ingredients

Dry Ingredients

  • 2 c flour
  • 1/4 c brown sugar
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 1/8 tsp nutmeg
  • 1/8 tsp cinnamon

Wet Ingredients

  • 1/2 c vegan butter (melted)
  • 1 flaxseed egg
  • 1/4 c aquafaba
  • 2 c soy milk
  • 1 tsp vanilla extract

Instructions

  1. Put a metal bowl, as well as your whisk, in the freezer for 10 minutes.

  2. Start the waffle maker on medium high heat to make sure it’s ready. You know it’s ready if the cooking spray smokes.

  3. Mix dry ingredients together. Sift the flour and make sure the brown sugar isn’t too clumpy (for even distribution).

  4. In the freezer cooled bowl, add the aquafaba and whisk until they form peaks.

  5. In a separate bowl mix all wet ingredients (including flaxseed egg) and mix. Add wet ingredients to the flour mixture and mix.

  6. Fold in the aquafaba into the bowl but do not over mix.

  7. In my waffle maker ½ cup of mix makes for the perfect sized waffle.
