(optional) Soak your protein in a vegan buttermilk for a few hours.
In one bowl mix all the dry ingredients.
In another bowl add your dredge of choice (e.g. cashew cream, Just Egg).
Dunk your protein in the dry mix, then in the wet mix, and back in the dry mix. Put it aside on a baking tray. Do this for all pieces.
Let your battered protein rest until the batter has changed consistency.
Bring oil to heat and place your protein to fry until it floats.
